The heat was on in our annual chili contest

The heat was on and everyone needed a bigger bowl.

Thanks to everyone who competed in our annual chili cook-off and our team spirit day. Congratulations to Dave, who took home the first-place trophy for the second year in a row, for his winning recipe! Karen took home 2nd place and the President’s Award for her Chili. Kudos Karen!

 

Our winner, Dave, shared his special recipe with us. Now you can go give it a try:

“Note: I don’t measure, so the amounts in here are approximate.”

 

A pound of mild breakfast sausage and a pound of 80/20 ground beef.

Put that in a pan with a diced green pepper and diced half a yellow onion.

To this, add garlic powder, onion powder salt and pepper.

Unfortunately, I eye everything so I can't give you amounts.  Maybe a tablespoon of the garlic and onion and a teaspoon of salt and pepper.

Once this is cooked down, drain fat and add to a larger pot.

 

To this add:

3 cans of petite diced tomatoes

1 can of tomato sauce

1 can black beans-drained

1 can light kidney beans-drained

1 can of white corn-drained

¼ cup of chili powder

2 tbsp of paprika, cumin, garlic powder, onion powder

½ tsp of cayenne pepper

Salt and pepper to taste

 

Bring this all to a boil, and then simmer for an hour.

Best if made the night before so it has a chance to sit and absorb the flavors.
